We have been the owners and operators of the Stillman Inn since May of 2000. Before we purchased the Inn, we lived in Gurnee, Illinois. Dave had been a Remodeling contractor for 26 years and during the last two years our business grew quicker than we could manage. We decided to hire business consultants to help manage the business.
One of the major decisions we faced was how long we wanted to be running the business and what we wanted to do with it. We decided that we would stay in the business for 10 more years and then purchase a bed and breakfast in Galena.
Two weeks later, while we were on a regular visit to Galena, we stopped in to see a friend and anxiously told him of our plans. He mentioned that the Stillman was for sale and that it would be perfect for us. The Inn needed a lot of work, which we knew we could do. That afternoon we stopped by the Inn and spoke with the owner. We closed three weeks later!
Despite what the kids tell you, they are happy we are here in Galena. We now have more time with them and our grandchildren!!!

10 Large Eggs
2 1/2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
8 slices thick bread, cut into 1" cubes
(1 Italian or French bread loaf works great)
1 cup shredded sharp cheddar cheese
Optional fillings (choose one)
1 pound cooked pork sausage broken up
1 pound cooked ground beef
Vegetables (Green pepper, red pepper, broccoli, squash, etc.)
Butter a 9 x 13 inch baking pan. In a large bowl beat the eggs with an electric mixer. Add the milk, salt, and dry mustard. Stir in the bread, cheese and one of the optional fillings thoroughly. Spread mixture in the prepared pan. Cover with foil and refrigerate at least 12 hours before baking. Bake in a 350 degree oven for 35 to 40 minutes. Cut in large squares and serve with toast or English muffins. Serves 6-8 people. We pour small amounts of Hollandaise sauce over each slice!
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 egg yolks 1 3/4 cups milk
1/2 cup cooking oil
2 egg whites
In a medium mixing bowl combine flour, baking powder, and salt. Make a well in center of dry mixture; set aside
In another medium mixing bowl beat egg yolks slightly. Stir in milk and oil. Add egg yolk mixture all at once to the dry mixture. Stir just until moistened (batter should be lumpy).
In a small mixing bowl beat egg whites until stiff peaks form (tips stand straight). Gently fold beaten egg whites into batter, leaving a few fluffs of egg white. Do not overmix. Pour 1 to 1 1/4 cups batter onto grids of a preheated, lightly greased waffle iron. Close lid quickly; do not open until done. Bake according to manufacturer's directions. When done, use a fork to lift waffle off grid. Repeat with remaining batter. Serve warm.
